Grain-Free Apple Pie Pancakes

Ingredients

  • 3/4 cup almond flour
  • 1/3 cup arrowroot starch
  • 1 teaspoon baking powder
  • 1/2 teaspoon apple pie spice
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 tablespoons melted butter
  • 1/4 cup finely chopped pecans
  • 1/2 apple cored and sliced into 1/8-inch rounds
  • additional butter

Instructions

  • Combine first 6 ingredients in a medium bowl.
  • Combine egg, buttermilk, and butter in a small bowl.
  • Add egg mixture to flour mixture and stir to combine.
  • Stir in pecans.
  • On a heated griddle or skillet, melt a small amount of additional butter and cook a slice of apple for 1 minute on each side.
  • Spoon 1/4 cup batter over apple and cook 2-3 minutes on each side.
  • Repeat with remaining apples and batter.
  • Serve with honey and a small dollop of yogurt.
