Pumpkin-Pecan Bites

Servings 20 bites


  • 3 cups pecan halves
  • 5 dates pitted
  • 3/4 cup canned pumpkin
  • 1/2 cup gluten-free rolled oats
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon almond milk


  • Combine all ingredients in the container of a food processor; pulse until mostly smooth. Coat hands lightly with oil or cooking spray, roll 1 heaping tablespoon into a ball. Repeat with remaining mixture. Chill before serving.
