Citrus Salad with Baby Kale

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon champagne vinegar
  • 1 teaspoon honey
  • 1/2 tablespoon finely chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh pepper
  • 1 grapefruit peel removed and sliced
  • 1 orange peel removed and sliced
  • baby kale
  • 1 blood orange peel removed and sliced

Instructions

  • Combine first 6 ingredients in a small bowl; stir with a small whisk or a fork until well combined.
  • Place citrus slices and baby kale on a serving plate. Drizzle evenly with dressing.
