brunch will always be my favorite.
plates full of bacon, eggs, pancakes, waffles, french toast, scones, muffins, and fruit. cups full of steaming, hot coffee. the whole nine yards.
one of my complaints about gluten-free living is that it isn’t so simple to go out to eat and find a decent option of gluten-free brunch menu items. maybe there’s a plain pancake. or just maybe a muffin, if you’re really lucky. but truly, if you’re gluten-free then it’s usually bacon and eggs. {woo-hoo. thumbs down.}
so sometimes you have to just stay at home and make your own.
i love dutch babies… those poofy, bouffont-y, egg-y pancakes that are so beautiful and bloated when you pull them out of the oven. it’s like a fun science experiment. i have a basic recipe for a pretty darn delicious one in my book, fast and simple gluten-free. it was one of my sweet gluten-free blogger friend, ea’s, favorites. she even posted it on her site back then.
so i’ve switched it up to be a savory. topped it with some pretty yummy things. and poof, my own delicious gluten-free brunch!
i’d really be thrilled to see a gluten-free savory dutch baby with salmon & herbed cheese on the menu out some day. but for now, at least this one softens the blow immeasurably.
Savory Dutch Baby with Salmon & Herbed Cheese
Ingredients
- 1/2 cup kumquat's gluten-free all-purpose flour
- 1/2 cup milk
- 4 large eggs
- 3 tablespoons butter
- 3 green onions chopped
- 1/4 teaspoon salt
- smoked salmon
- 1 tablespoon capers
- 1/2 5.2-ounce package Boursin garlic & fine herbs cheese
- arugula
- freshly ground pepper
Instructions
- Preheat oven to 450°.
- Combine flour, milk, eggs, and salt in a blender container. Pulse until smooth.
- Heat butter in a Dutch baby pan or a large iron skillet.
- Cook green onions for 3-4 minutes, or until just beginning to brown.
- Pour flour mixture into pan (or skillet).
- Immediately place pan in hot oven and bake at 450° for 18-20 minutes or until puffed and brown.
- Top Dutch Baby with smoked salmon, capers, crumbled Boursin cheese, arugula, and a sprinkle of freshly ground pepper. (Dutch Baby will deflate and fall after being removed from oven.)
