and so, today, i preempt it with my first pumpkin recipe of the season. maybe one of the easiest, most guilt-less pumpkin recipes you’ll see.
the recipe redux has challenged us this month to make a sweet, no-bake dessert. with that brings super-quick prep times, and in this case, all natural goodness.
these bites are free of refined sugars, free of gluten, and full of delicious holiday flavors.
Pumpkin-Pecan Bites
Servings 20 bites
Ingredients
- 3 cups pecan halves
- 5 dates pitted
- 3/4 cup canned pumpkin
- 1/2 cup gluten-free rolled oats
- 1 teaspoon pumpkin pie spice
- 1 tablespoon almond milk
Instructions
- Combine all ingredients in the container of a food processor; pulse until mostly smooth. Coat hands lightly with oil or cooking spray, roll 1 heaping tablespoon into a ball. Repeat with remaining mixture. Chill before serving.
