it’s beginning to look a lot like christmas at my house.
this past weekend, the tree was trimmed, the stockings were hung, the nativity was set, and the gingerbread pancakes were cooked. (oh, and the outdoor christmas laser light show my husband bought without consent was turned on… {sigh} um. okay.)
i’ve said it before and i’ll say it again. i believe gingerbread shouldn’t be reserved for only the christmas season. it’s so crazy good it should be made and eaten all year round.
but i’ll confess, it is this time of year that i crave it the most.
and it shows up a LOT during the holidays, in my house, in the form of pancakes.
frankly, i’m a little shocked that it’s taken THIS long to actually share a gingerbread pancake recipe with you, dear reader. but the wait was worth it, because this time it is not just gluten- but also grain-free!
i’ve found a really happy place in baking/cooking goodies with a mix of almond flour and arrowroot starch. the combination seems to be a perfect nirvana and makes things exclusively grain-free, but immensely delightful in taste AND texture.

Perfect Grain-Free Gingerbread Pancakes
Ingredients
- 1 1/2 cups almond flour
- 3/4 cup arrowroot starch
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/8 teaspoon ground cloves
- 2 large eggs
- 3/4 cup buttermilk
- 1/4 cup molasses
- 4 tablespoons melted butter
Instructions
- Combine almond flour, arrowroot starch, baking powder, cinnamon, ginger, nutmeg, baking soda, salt, and cloves in a large bowl. Combine eggs, buttermilk, molasses, and butter in another bowl. Add egg mixture to almond flour mixture; stir with a whisk until combined.
- Add 1/4 cup mixture to a preheated griddle or skillet; after 2-3 minutes or once tops begin to bubble, carefully flip and cook until done.
