i’m not really a small bite person.
i like big bites, and i cannot lie.
so, my kids recently watched the new alvin and the chipmunks movie. they picked up on the ol’ sir mix-a-lot song after the chipmunks belted it out, and have been singing that line over and over. i didn’t tell them that i know all the words to the song. they don’t need to know that yet, right?! thanks, 1992.
nonetheless… the recipe redux challenge this month is to share a recipe that would be categorized as a small plate, finger food, one-bite food.
despite the fact that i crazy love to fiddle over fussy cake pops and decorated cookies, i STRUG-GLE over appetizer recipes. those little bites of things. i kinda hate them, honestly. i don’t mind eating them so much, but developing recipes for appetizers… ugh. my anaconda don’t want none.
desserts, though?! i’m all over that.
so i’ve turned this challenge around. truffles are small bites. and i love them.
i’ve needed a little easy something to grab as a “dessert.” something chocolatey but not a sugar bomb. so enter, these healthy dark chocolate truffles!
they are heavy on cocoa, which meets a hefty antioxidant criteria. just a tad bit of sweetness from the honey and dark chocolate.

Healthy Dark Chocolate Truffles
- 2 1/4 cups cocoa
- 4 ounces dark chocolate melted
- 1/3 cup melted coconut oil
- 1 tablespoon honey
- 1/4 teaspoon salt
- Additional cocoa & finely shredded unsweetened coconut to roll
- Combine cocoa, chocolate, coconut oil, honey and salt in a medium bowl.
- Roll to form 1 1/2-inch balls. Roll in additional cocoa or finely shredded unsweetened coconut
