hello, dear reader.
this is where i pull back the curtain a bit and say that i’ve needed a minute. or like a month or two. but i’m still here.
i’ve learned a thing or two about myself in all of my years… one is that when i have big life things going on i tend to tuck in. and this time there’s lots of big life things, so i’ve tucked hard.
as you may know, we’ve recently headed back to texas for the year to be nearer to my family, which warms the cockles of my heart. it’s so great to be on familiar land and in comfortable spaces. but it’s a move and a transition, and those always take the wind out of my sail a bit, especially when little people are involved.
the reason we are here in texas is to be nearer to support and help while my husband is away for a while on the other side of the world. single-parenting three littles is no joke. and doesn’t offer much down time. to make complete thoughts. to pee alone. or to have too many moments of grand creativity. and the homeschooling hasn’t even begun for the year yet. phew.
the biggest life thing is a recent bad news health diagnosis of my mother-in-law. this one sent us a reeling and has gobbled up time, energy, focus, and peace as we process and make plans.
whether the stresses are planned, like moves and deployments, or unplanned, like disease and hurricanes, i believe it is important to give ourselves grace. and i’m not always so great at that. i’ll tell you, though, there is nothing like having the rug pulled out from under you (or washed out from under you, like my beloved hometown of houston) to realign priorities and force you to face what’s truly most important. alongside what is most urgent.
i find it rather ironic that i’ve been sitting on this recipe for a while, a recipe for grain-free fortune cookies. despite the fact that these were delightfully the first fortune cookies i’ve eaten in over ten years, i am confident that fortune has little to do with the reality of our futures. if we are humans on earth we will experience joys and struggles. it’s a fact.
i only hope that in the face of these rough times, i can be a face of love, hope, grace, and peace. to my people, to others, and to myself. and by the mercy of our Creator and my Stronghold, that my song will always be…

Grain-Free Fortune Cookies
- 2 large egg whites
- 1/3 cup sugar
- 4 tablespoons melted butter
- 1/4 cup almond flour
- 1/4 cup arrowroot starch
- 1/4 teaspoon salt
- 1 teaspoon vanilla paste or extract
- Preheat oven to 375°.
- Combine all ingredients to make a smooth batter.
- Spoon 1/2 tablespoon batter onto a baking sheet. Repeat three times to have 4 circles of batter on the baking sheet. Bake at 375° for 5 minutes, or until edges or just beginning to brown.
- Have your fortune papers handy, if adding.
- Remove one circle from baking sheet immediately (it will be rather hot, so get those hands ready!). Place paper in center (if using), fold circle in half, and then fold ends downward together to form fortune cookie. Place cookie in the well of a muffin tin to cool. Repeat with remaining batter.
