Gingerbread Waffle Donuts

i am a firm believer that gingerbread should not be reserved for christmas alone.

however, i unfortunately forget about it too often and am reminded how much i love it during this time of the year.

yes, i suppose the aroma of the blends of spice brings about memories of christmas. and maybe i’ll concede those man-shaped cookies should maybe be christmas only. but a loaf of gingerbread and most certainly a gingerbread breakfast item should be eaten year-round.

last year, overcome by first trimester of pregnancy cravings, i obsessively treated my kids to healthy seasonal recipes’ gingerbread pancakes (gluten-free versioned, of course). i even squirreled away extra pancakes and ate them cold from the fridge. then there were the iced gingerbread cookies.

well, i’m not pregnant (thank you very much!) but the cravings for those sweetly spiced gingerbreads remain. this time, they’ve taken the form of a waffle donut. if you remember, i posted maple spice glazed waffle donuts a little while back. those suckers were awesome. seemed the most logical next step should be the gingerbread waffle donuts. with a lemon glaze, of course.

Gingerbread Waffle Donuts

Ingredients

For Donuts

  • 1 cup kumquat's gluten-free all-purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • 1/4 teaspoon xanthan gum optional
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1 large egg
  • 2 teaspoons vanilla paste or extract
  • 3 tablespoon molasses
  • 3 tablespoon melted butter

For Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon lemon juice
  • 1/4 teaspoon vanilla paste or extract

Instructions

  • Preheat waffle iron according to manufacturer's instructions.
  • Combine flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, allspice, clove, gum, and salt in a medium bowl. Combine milk, egg, vanilla paste, molasses, and butter in a measuring cup or medium bowl. Add milk mixture and melted butter to flour mixture; stir until just combined.
  • Spoon about 2 tablespoons mixture into the center of hot waffle iron; cook according to manufacturer's instructions. Cool slightly on a wire rack. Repeat with remaining batter.
  • Combine glaze ingredients with a wire whisk to make a thick glaze. Add more sugar or milk to achieve desired consistency. Dunk tops of waffle donuts into glaze. Allow excess to drip off and return to wire rack for glaze to set.
