once again… the challenge was made.
the recipe redux ladies threw out one this month that made me have to think twice.
the challenge was to share a recipe that was super budget-friendly.
here’s a moment of truth… i’m really bad about budgeting when it comes to a grocery bill. and here’s my reasoning for now… we are a homeschooling family who doesn’t get out much. that’s a good reason to eat whatever we want, right?
but seriously, i’m not typically a spender. i don’t buy a lot of clothes or things. we don’t go out much because we have little people and that’s just not always fun. no regular, big, expensive trips. we just don’t spend much. except at the grocery store. {sorry, honey.}
partly due to the fact that we have the requirement of gluten-free food purchasing and that i like to buy mostly organic foods, which adds a small percentage to the bill. plus i like to cook… and eat. not to mention that i have 5 mouths to feed. but i see it all as an investment in the health and growing of these little bodies we have to care for. (and the bigger bodies too, though hopefully the growing is over for us.)
however… i fully understand that these little bodies and their appetites will only be getting bigger! so, this month’s challenge was a great one for me to consider for my near future. i’ll be bookmarking this list of reduxer’s recipes to pull out when my kids all reach the age that they’re eating us out of house and home.
the recipe i’m sharing today is truly one we make around here, often. it’s one my son requests almost weekly, especially during this chilly months. a simple garlic tomato soup… of course, with grilled cheese on the side. always a hit with the kids… and the grown-ups. it doesn’t get much easier, low-cost, or comforting than that!

Garlic Tomato Soup
Ingredients
- 1 28-ounce box or can of chopped tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon sugar optional
- 1/2 teaspoon pepper
- 1 tablespoon garlic paste refrigerated in the produce section or 3 finely chopped garlic cloves
- 1 tablespoon olive oil
- 1 cup chicken or vegetable broth
- 1/2 cup coconut coffee creamer
Instructions
- Combine tomatoes, Italian seasoning, salt, sugar, pepper, garlic paste, and olive oil. Add chicken broth. Stir to combine.
- Bring to a simmer; cook for 10 minutes.
- Use immersion blender to pulse mixture until smooth.
- Stir in creamer.
- Serve with an additional sprinkle of pepper.
