Caramelized Onion, Bacon & Apple Pizza with Salted Maple Drizzle

who else is glad the elections are over?! …no more one side or the other. …this party or that. well, if savory and sweet were political parties, this recipe would win all of the votes. (if only bacon could be president…)
if you remember, there was that pizza that i once saw at my local whole foods that urgently forced me into the kitchen to make my own gluten-free version. well, it happened again. while walking through the store, near their brick-oven pizza station, i spotted a caramelized onion, bacon and apple pizza! wow… yum! i think i’m going to be bold enough to say that mine may even be better. of course, i didn’t try to wheat version, but i still think i’m right. the salted maple drizzle puts this one over the top.

Caramelized Onion, Bacon & Apple Pizza with Salted Maple Drizzle

Servings 8 servings

Ingredients

  • 2 tablespoons butter
  • 1 medium onion thinly sliced
  • 3 slices bacon cut into 3-inch pieces
  • kumquat's gluten-free pizza crust or your favorite gluten-free pizza crust
  • drizzle of olive oil
  • sprinkle of garlic powder
  • 8 ounces shredded mozzarella
  • 3 tablespoon shredded parmesan
  • 1/2 honeycrisp apple thinly sliced
  • 3 tablespoons maple syrup
  • 2 pinches kosher salt

Instructions

  • Preheat oven to temperature recommended for your crust.
  • Melt butter in a large skillet. Add onion slices and cook until browned stirring frequently. about 15 minutes. Remove onions from skillet and cook bacon pieces for 2-3 minutes on each side, or until just beginning to cook. Do not crisp.
  • Roll crust out onto a pizza pan or a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle edges with garlic powder. Sprinkle cheeses evenly over pizza crust. Top evenly caramelized onions, bacon, and apple slices.
  • Bake according to crust instructions, or until cheese is slightly browned and crust is cooked.
  • Meanwhile, combine maple syrup and salt in a small saucepan. Bring to a boil and cook 30 seconds. Drizzle evenly over cooked pizza. Slice and serve. Enjoy!
