Banana Chocolate Chip Waffles

i love gluten-free waffles.

i just realized how very much i love waffles. you see, it’s recipe redux time of the month and i just noticed that only two months ago i also posted a waffle for the recipe challenge. these dark chocolate-peanut butter waffles, to be exact. then there were once these arugula eggs benedict with herbed waffles. boy those were darn good. and one of my all-time favorites from a while back, frito waffles with mascarpone and warm strawberry compote. maybe those sound weird, but they were heavenly!

this time around, i wanted something easy.

not a fancy waffle, but a basic, simple, delightful waffle.

the recipe redux ladies challenged us to use something in our kitchens that has been hanging around a while. maybe a spice or a can of something in the pantry. for me, it seems i always have a stash of over-ripe bananas in my freezer. as soon as i start seeing those bananas turning dark, i just chunk them whole into the freezer.

yes, i love making my recently posted favorite pecan-banana bread and i also am on board with the banana “ice cream” phase of the last few years (like these chocolate ice cream sandwiches). but they now have some intense competition for that freezer stash of over-ripe bananas.

the thing that’s so crazy great about those bananas is that they add some awesomely natural mild sweetness to whatever you’re making. these waffles are sweetened just a tad with the maple syrup i’ve built right in and a small handful of chocolate chips, but otherwise the banana brings out the bright sweetness they need to round it all out.

i’m sorry, but i’m afraid the waffles will keep coming…

Banana Chocolate Chip Waffles

Servings 9 large waffles

Ingredients

  • 1 1/2 cups gluten-free oat flour
  • 1/4 cup tapioca starch
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons organic canola oil
  • 3 tablespoons maple syrup
  • 1 tablespoon vanilla paste or extract
  • 2 large eggs
  • 1 large ripe banana mashed
  • 1/4-1/2 cups mini-chocolate chips

Instructions

  • Combine oat flour, tapioca starch, baking soda, and salt in a medium bowl.
  • Combine buttermilk, oil, maple syrup, vanilla, eggs and banana in another medium bowl.
  • Add buttermilk mixture to flour mixture and stir well to combine. Stir in mini-chocolate chips.
  • Preheat waffle iron according to manufacturer's instructions.
  • Pour batter onto waffle iron when hot and cook until done.
