i recently bought a new, easy blender… (no, unfortunately not a super-duper vitamix.)
i do love it though and have been putting it to good use in the mornings for protein shakes for me and my son. my little girl (who is now 10 MONTHS!) has even starting edging her way in for some straw-fulls in the morning.
so with a couple extra mangoes on hand, i knew what to do. mango lassi is one of my favorites. and as i often do, i wanted to make a dairy-free version. pitch in a can of coconut milk and it is delicious, healthy and quick.

Serves: 4 servings
- 2 mangoes, peeled and fruit removed from pit
- 1 (13.5-ounce) can unsweetened coconut milk
- 1 cup ice
- 1 teaspoon cider vinegar
- 2 tablespoons honey
- Combine all ingredients in a blender. Pulse until smooth.
